
These cheesy spinach bites are a power house of health and goodness. With very few ingredients and quick steps, these can be altered to your taste. You can add your choice of seasoning from herbs to spices that you would prefer in your egg bite. You can also add your choice of veggies.
They are naturally gluten free, low carb, keto friendly and paleo friendly. Plus, you can always make them ahead of time and store in fridge.
Material required:
1 cup spinach
6 eggs
1/2 cup shredded cheddar cheese
1 tbsp milk
1 tsp seasoning (herbs, spices etc.)
1 tsp garlic powder
1/2 tsp salt
Directions:
1. Blanch spinach and puree it.
2. Preheat oven to 350 degree Fahrenheit and brush muffin tin with butter or with spray a cooking spray.
3. In a separate bowl, whisk eggs until they are nice and frothy.
4. Add pureed spinach, cheese, salt, butter, seasoning and give a good mix.
5. Fill 3/4 of the tin with the mix and let it cook for 20-22 mins. or until it turns brown.
6. Let it cool and serve with hot sauce or avocados.
Notes:
1. You can refrigerate these bites for 3 days and freeze for 3 months.
2. This recipe added pureed spinach, however you can also add chopped spinach.
